Fruit infused water recipes

1/2 cup fruit
1 1/2 cup water
2 mint leaves
Ice (optional)

Place fruit in bottom of jar and add water.

Stir and gently press fruit with spoon to release flavors.

Refrigerate for at least one hour.  Add ice before serving.

Fruit leather recipe.
Fruit leather is a fun, healthy party snack that kids will love.  Surprisingly easy to make with your child's favorite fruit or whatever fruit that is in season. 
 

Fruit Leather Recipe

4 cups ripe strawberries or any fruit
2 tablespoons honey

Preheat oven to 150 - 200 degrees.
Line a 9x13" baking sheet with parchment paper or a Silpat baking mat.

Puree strawberries and honey in a blender or food processor until smooth.

If desired, remove seeds by pouring mixture through a sieve.
Pour mixture onto the parchment lined baking sheet and spread into a thin, even layer.

Bake for 6 - 8 hours until the fruit leather is set and the center is not tacky.
Leather should peel away easily from the parchment or mat.

Let cool to room temperature.

Using scissors cut the parchment paper from the edges.  Cut into strips and roll up with parchment.  If you used a Silpat, gently pull off the fruit leather and cut into squares or strips.  To make fruit roll-up, roll the strips in parchment paper.


Watermelon appetizers.
Healthy and delicious, watermelon is the perfect appetizer for any party.  Slice into wedges and insert popsicle sticks into the rind for a fun snack that will have kids eating more fruit.

Fruit Pizza Recipe

4 oz. cream cheese
4 oz. cool whip
1/4 cup powdered sugar
1/2 tsp vanilla

Beat the cream cheese until creamy.

Add the cool whip and mix well.

Stir in the powdered sugar and vanilla.

Spread on watermelon slices and top with fruit.
